Easy Ground Pork Bolognese

Ingredients

  • 1 lb Queen City Farm pastured ground pork
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup milk
  • 1 lb pasta

Directions

    Brown the ground pork in olive oil, breaking it up.

    Add the onion, carrot, and celery and cook until soft, then the garlic.

    Stir in the tomatoes and milk, then simmer gently 45 minutes, until thick.

    Toss with cooked pasta and top with parmesan.

Notes

Farm tip: A splash of milk simmered into the sauce makes it silky and mellows the tomatoes — a classic bolognese trick.

Serving suggestion: Serve over tagliatelle or rigatoni with parmesan.
