Ground Pork Fried Rice

Ingredients

  • 1 lb Queen City Farm pastured ground pork
  • 3 tablespoons oil
  • 4 cups cold cooked rice
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 3 green onions, sliced

Directions

    Brown the ground pork in oil in a wok or large skillet over high heat; push to one side.

    Scramble the eggs in the empty space, then add the peas, carrots, and garlic.

    Add the cold rice and stir-fry, breaking up clumps, until hot and lightly toasted.

    Stir in the soy sauce and sesame oil and finish with green onions.

Notes

Farm tip: Use cold, day-old rice — fresh rice turns mushy. High heat and a big pan keep it from steaming.

Serving suggestion: Serve as a meal or alongside dumplings.
