Harissa Lamb Marinade

Harissa Lamb Marinade

Ingredients

  • 1–2 lb Queen City Farm pastured lamb (chops, steaks, or cubes)
  • 3 tablespoons harissa paste
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • Juice of 1/2 lemon

Directions

    Whisk the harissa, olive oil, garlic, honey, cumin, salt, and lemon juice together.

    Coat the lamb fully and marinate in the refrigerator 2–8 hours.

    Wipe off the excess and grill or sear over medium-high — the honey and spices char quickly, so watch it closely.

    Rest a few minutes before serving.

Notes

Why harissa? The chili paste brings smoky heat, the honey balances it with a little sweetness, and the olive oil and lemon carry the flavor into the lean meat while tenderizing it. It's a fast way to give grilled lamb big, bold flavor.
