Garlic Rosemary Lamb Marinade
Always marinate your lamb. A simple garlic, rosemary, and lemon marinade that seasons and tenderizes pastured lamb — perfect before grilling chops, steaks, or a leg.
A bold harissa marinade with warm spices and a touch of honey — big, smoky-spicy flavor for grilled pastured lamb.

Whisk the harissa, olive oil, garlic, honey, cumin, salt, and lemon juice together.
Coat the lamb fully and marinate in the refrigerator 2–8 hours.
Wipe off the excess and grill or sear over medium-high — the honey and spices char quickly, so watch it closely.
Rest a few minutes before serving.
Why harissa? The chili paste brings smoky heat, the honey balances it with a little sweetness, and the olive oil and lemon carry the flavor into the lean meat while tenderizing it. It's a fast way to give grilled lamb big, bold flavor.
