    Brown the sausage in olive oil, breaking it into chunks; remove and set aside.

    Cook the peppers and onion in the drippings until soft and charred at the edges, then add the garlic.

    Return the sausage, stir in the marinara, and simmer 5 minutes.

    Season to taste.

Notes

Farm tip: Let the peppers get a little char before stirring — it deepens their sweetness.
