Herb-Butter Pastured Pork Chops
A weeknight-simple, restaurant-good way to cook our pastured pork chops — seared hard, basted in garlic-herb butter, and rested so they stay juicy.
Pastured bratwurst grilled until snappy and served with sweet grilled peppers and onions.

Toss the peppers and onion with olive oil, salt, and pepper.
Grill the brats over medium heat, turning, 15-18 minutes, until cooked through (160F).
Grill the peppers and onions in a basket until charred and soft.
Serve the brats in buns topped with the peppers and onions.
Farm tip: Grill brats over medium, not high — too hot and the casings split before the center cooks.
Serving suggestion: Top with mustard and serve with potato salad.
