A weeknight-simple, restaurant-good way to cook our pastured pork chops — seared hard, basted in garlic-herb butter, and rested so they stay juicy.
Cubed pastured lamb marinated and skewered with peppers and onions, then grilled.

Marinate the lamb in the olive oil, garlic, cumin, paprika, and lemon for 1 hour.
Thread onto skewers alternating with peppers and onion.
Grill over medium-high, turning, 10-12 minutes to medium.
Rest a couple minutes before serving.
Farm tip: Cut the lamb into even cubes so the skewers cook at the same rate.
Serving suggestion: Serve over rice or in warm pita with garlic sauce.
