Preheat oven to 375F. Cook the ziti until just shy of al dente; drain.
Brown the sausage with the onion, add the garlic, then stir in the marinara.
Mix the ricotta with the egg and parmesan. Toss the pasta with the sauce, then fold in the ricotta.
Spread in a baking dish, top with mozzarella, and bake 25-30 minutes, until bubbly and golden.
Farm tip: Undercook the pasta by a couple minutes — it finishes cooking in the oven and won't turn mushy.
